Diary of a Mindful Eater
So we all know the minute we say we are going on a diet we crave the foods we are trying to avoid. We watch the clock to see if it’s time to eat again. We feel deprived if we deny ourselves the treats we feel we deserve. The irony is that most of these so called treats are not good for us at all. So why do we eat things that are potentially harmful to our health. Things that can contribute to degeneration, disease and ageing.
So for the final day of my Mindful eating diary here is a treat. It’s divine. It nourishes blood, balances yin and yang and is good for energy…….. In moderation
Date and walnut flapjacks
from Recipes for Self Healing by Daverick Leggett
6 oz walnuts
8 oz dates
1 cup sunflower oil
2 eggs beaten
2 tblsps molasses
1 tblsps cinnamon
1 tsp ginger
20 oz oatflakes
Crush walnuts and chop dates roughly. Don’t make a meal of it!!
Add a small amount of hot water to the dates to soften them.
Add molasses, walnuts, sesame seeds, oil, spices and eggs. Stir well. Gradually add the oats. It’s not easy, it’ll give you muscles! Press down into a shallow baking tray until it is really compact. Bake at about 160 for half hour or so. Cut when still warm.
You can use other dried fruit and nuts. Cranberries and cherries, sunflower seeds, pecans.
I cut into chunks and freeze it otherwise I would eat it all warm.
